101 Things in 1,0001 Days

Today’s post is a bit different than normal. It’s not a list of resolutions, which I’ve said previously I don’t like, but a list of actionable things I’d love to do or accomplish in the near future.

I got the idea from Mackenzie Horan of Design Darling. She creates lists of 101 things to accomplish in 1,001 days (2.75 years). She says she chose this number because it’s a happy medium between a to do list and a bucket list.

I like the time frame because one year seems too short for larger goals, but five years feels ages away. 2.75 feels close enough for things I want to work on now, but still enough time that I could accomplish something major! I think it will be a fun way to make some big dreams while also keeping myself on track with some of my day-to-day goals. So, here goes!

The best Apres Ski gear

I’ve loved skiing since I was a kid, but one thing I’ve come to enjoy in recent years is the après part of skiing! There’s something soo nice about meeting up with your friends at the end of a long day on the slopes and sitting down to a drink or two.

In Mammoth, which we’ve been to a couple times this past year, there are so many fun bars- at the base of the mountain and at the peak and half way up. We’re going to Whistler for the first time this weekend and I’ve heard the mountain is MASSIVE so I’m excited to check out the après options there. In excited anticipation of our trip, I’m rounding up the best après ski gear!

Orange Chocolate Sandwich Cookies

I’m one of those rare people who gets really jazzed for Valentine’s Day. I love it. I’m not saying I have to get flowers and go out to a fancy dinner, but I love the little things about the holiday. I love the candy + treats that surround it, obv… and I’m all about the cutesy decorations that are everywhere, the sweet cards and the excuse to watch a sappy love movie.

My mom always gave my siblings and I little gifts for Valentine’s Day (and she still does! The heart platter in the last photo is from her this year) and that always made the day extra special. I look forward to doing the same… one day. For now I’ll enjoy baking all the sweets and dishing them up to Mark and anyone else who comes near me.

So in honor of one of my favorite holidays, I baked up something special this past weekend and it may be a new favorite!

Roasted beet vegan pasta

I love beets and eat them roasted all the time- on salads, with a little goat cheese and balsamic or just by themselves. And it should go without saying, I love pasta (who doesn’t??) So when I saw a recipe that used beets in the pasta sauce, I had to try it.

Vegan’s not a word you’ve seen on this blog before… and won’t see a lot of lol. But trust me on this one- this is a winner even for butter/egg/cream lovers like myself! This Healthy Roasted Beet Vegan Pasta is easy to make, but the color from the beets makes it a little more special than your average pasta dish. And instead of getting it’s creaminess from milk or cream, it comes from ground cashews!
